salsa creole...
not really a side dish, but a really nice steak ‘sauce’…
This is one of the salsas served with steak in Argentina – beef capital of the world…
1 Onion; finely chopped
1 Sweet Red Pepper; finely chopped (Red Bell or Pimento)
1 Green Bell Pepper; finely chopped
1 Tomato; seeded and finely chopped
1 clove garlic; finely minced
1 Tablespoon flat-leaf parsley; finely chopped
1/2 cup Olive Oil
1/4 cup Red wine vinegar
salt and pepper to taste
Mix all of the ingredients together and serve. I enjoy this sauce as fresh as possible but if you would like to let the ingredients steep for a while then go for it.
My wife likes sliced mushrooms sauteed in butter with her steak…

Thanks Bro, I’m gonna give that a try. It sounds like something good my man, and I got the ingredients I don’t have on my shopping list. Game don’t start till 4-15, so I’ll go on the batchair to get the goods in the a.m. and still be grilling on time. I always wanted to go to one of them Argentina places where they serve steak on a sword. Kobe may be the Japan king, but I would put my money on them Argentina boys.

surf and turf?
How about some grilled clams? Go to a seafood place. Get some clams in the shell and throw them on until they pop open! Tastes great with melted butter!

stuffed squash bowls
slice an acorn squash in half, remove seeds this gives you 2 squash bowls.
score the squash cover with butter/margerine and bake in oven at 325 until fork soft.
stuff with your favorite stuffing.
my own fav. would be a seasoned cornbread stuffing with andouille sausage.

I am cooking
North Dakota Bluebill duck breasts for the game today!! YUM!
I own a cafe…so I take the salad croutons and grind them up and shake the breasts in with that and dip them in a sour cream and horseradish sauce mixture with a little greek seasoning. Great appitizers!
