In this mock scenario I have us waiting until the third to grab a QB. The more I think about this scenario I find it hard to think we would wait until the third to take a QB, but you never know how it's going to play out on draft day!
As with my previous mocks, I used typical draft-site resources to do the research on the picks (e.g., NFLDraftScout.com, DraftTek.com, WalterFootball.com, and the draft tracker on NFL.com). I also based the picks on what seems to be the concensus in regards to our most pressing team needs in consideration of the combine, pro-days, and free agency activity.
So here we go, Mock Draft Option 3..............."QB in the Third" is below.
With the 8th pick in round 1 the Vikings select:
CB – Justin Gilbert, Oklahoma State 6'0" 198lbs.
In 2013, Gilbert totalled seven interceptions, 42 tackles, seven passes broken up and one kick returned for a touchdown. Gilbert was selected to the 2013 WALTER CAMP FIRST TEAM ALL-AMERICAN and the 2013 ALL-BIG 12 FIRST TEAM.

With the 8th pick in round 2 (#40 overall) the Vikings select:
LB – Christian Jones, Florida State 6'3” 240lbs.
Jones recorded 56 tackles with 7.5 tackles for a loss, one interception and two sacks in 2013. He was selected to the 2013 ALL-ACC SECOND TEAM. Jones looks to fit the part as a 4-3 Will or Sam LB.

With the 8th pick in round 3 (#72 overall) the Vikings select:
QB - A.J. McCarron, Alabama - 6'3" 222lbs.
In 2013, McCarron completed 67 percent of his passes for 3,063 yards with 28 touchdowns and seven interceptions. He was named to the 2013 ALL-SEC SECOND TEAM, 2013 WALTER CAMP FIRST TEAM ALL-AMERICAN, and 2013 MAXWELL AWARD WINNER (COLLEGE PLAYER OF THE YEAR). If we do wait to the third to grab a QB, there's a few other possible prospects that should be on the board in the third as well, such as Aaron Murray from Georgia and or Tom Savage from Pittsburgh.

With the 32nd pick in Round 3 (96th overall - Seahawks pick gained from the 2013 Percy Harvin trade), the Vikings select:
OLB – Telvin Smith, Florida State - 6'3" 218lbs.
Smith led the Seminoles' defense in tackles in 2013 with 90. He also had two sacks, 9.5 tackles for a loss, four passes broken up and three interceptions. He was named to the 2013 ALL-ACC FIRST TEAM (COACHES). Smith will most likely need to add weight to stay at LB, but at 6'3" he has the frame to do so. If he adds a few pounds to his speed and athleticism he's a high ceiling player for the Vikes Defense!

With the 8th pick in round 4 (#108 overall) the Vikings select:
S – Dion Bailey, USC - 6'0" 201lbs.
Bailey recorded five interceptions with 62 tackles, 6.5 tackles for a loss, .5 sacks and six passes broken up in 2013. He is fast, instinctive, and is a ballhawk. He was named to the 2013 ALL-PAC-12 SECOND TEAM (COACHES).

With the 8th pick in round 5 (#148 overall) the Vikings select:
OG – Ryan Groy, Wisconsin - 6’5” 316lbs.
Groy has a well-built frame with powerful take-on strength and flashes the mean streak to overwhelm defenders at the point of attack. He was selected to the 2013 ALL-BIG TEN FIRST TEAM (COACHES). Another option at his pick is Russell Bodine from North Carolina, who has experience at Center and Guard.

With the 8th pick in round 6 (#184 overall) the Vikings select:
RB – Tyler Gaffney, Stanford - 5'11" 220lbs.
Gaffney totalled 1,709 yards on 330 carries for 21 touchdowns in 2013. His efforts warranted the second-best single-season total in school history. He also caught 15 passes for 86 yards and a score. He was named to the SECOND-TEAM ALL PAC-12 in 2013.

With the 8th pick in round 7 (#223 overall) the Vikings select:

So that's Mock Draft Option 3, showing us taking a QB in Round 3 as well as several other obvious needs and value picks throughout each of the seven rounds. As with the first 2 mocks I've utilized current draft rankings from several web-sites as well as balancing need with value from round to round. To also show variety I selected different players from mock to mock.
