Brian Urlacher out for the Bears is the biggest news for Chicago, and obviously, Percy Harvin on IR for the Vikings is really going to hurt the offense. I wouldn't get too worked up about Adrian Peterson not practicing--as the only real offensive threat, it makes sense to rest him during the week so he'll be ready to go on Sunday.
