How was your Christmas? Our new smoker cooked a little faster than we anticipated, usually it takes about 15 hours to smoke a brisket, yesterday our brisket cooked in less than 7 hours; it was drier than the turkey on on National Lampoon’s Christmas Vacation. Fortunately, we smoked a pork butt the day before so we had that instead. We’re saving the brisket to make chili next week along with the leftover pork.
